Wake Up Coffee Cake!





My mom and I made a coffee cake.  I found out something interesting about coffee cake.  It isn't made of  coffee!  It's called coffee cake because it goes well with coffee or your favorite drink.  I'm saving this piece of coffee cake for Yai Nit and my Uncle Dick because they take good care of me and take me out to eat.  My Uncle Dick's favorite drink is Diet Coke and I think it would taste good with the cake.  I don't know why I call Uncle Dick uncle?  I should call him Grandpa Dick because he's the oldest guy I know.

We got this yummy recipe from a Cooking Light cookbook.  Here it is:

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup granulated sugar
6 tablespoons butter, softened
1 teaspoon vanilla extract
1 large egg
1 large egg white
1 1/3 cups low-fat buttermilk
cooking spray
2 cups fresh blueberries
1 tablespoon turbinado sugar

1.  Preheat the oven to 350 degrees.
2.  Combine flour, baking powder, soda, and salt and whisk.
3.  In a separate bowl beat granulated sugar and butter on medium until well blended.
4.  Add vanilla, egg, and egg white to the sugar mixture.
5.  Add flour mixture and buttermilk alternately to the sugar mixture.  Begin and end with the flour   mixture.  Mix after each addition.
6.  Spray a 9" baking pan with cooking spray.
7.  Add half of the batter into the pan and sprinkle one cup of blueberries evenly over the batter.
8.  Pour the remaining batter into the pan and sprinkle the remaining blueberries over it.
9.  Sprinkle the turbinado sugar evenly over the top.
10.  Bake at 350 degrees for 50 minutes or until cooked.
